Chili Monday

Yesterday I made some chili.  It was soooooooooo cold. It seemed like the perfect thing to make.  The kids complained that it was too spicy.  That just meant more for me!! When Ron got home later in the evening he said it was good.  It’s the same recipe I make every time.  Sometimes it’s perfect and sometimes “too spicy” – poor little taste buds are so confused.  HA

Now – let’s get started!

Hearty Homestyle Chili

2 lb ground beef

1 med onion chopped

28 oz can diced tomatoes – undrained

6 oz can of tomato paste

4 minced garlic cloves

1 tsp salt

2 tsp chili powder

1 tsp cumin

1 tsp cayenne pepper

1/2 tsp pepper

30 oz can undrained chili beans (we use Bush’s)

brown the meat and onion – drain.

All all remaining ingredients except beans.  Bring to a boil.  Reduce heat and simmer for 1 hour.  Then add beans and simmer till ready to serve.

Serve with shredded cheese and sour cream.

the recipe also calls for 1/2 cup chopped green peppers, 1/2 cup chopped red peppers and 1 cup of chopped celery.  But I don’t like any of those so I don’t add them to my chili.
